Wagyu – The Most Prized Jerky in the World

What happens when you take one of the most prized meats in the world, naturally smoke it and cure it at a low temperature?

What happens is you create this: the first Wagyu jerky ever made using artisanal methods in Italy.

As some of you may know, Wagyu is a special breed of Japanese cattle that has been genetically selected for its marbling, meaning the dense veins of intramuscular fat that make this meat tender, juicy and incredibly flavorful.

Besides genetic selection, its characteristics mainly come down to the farming method, which allows the animals complete freedom to roam and includes a targeted diet for each animal.

Wagyu also holds another record, this time a market one: its meat can cost hundreds of euros per kilo.

So we're already starting from an exceptional raw material, which we then craft by hand using our process, refined over decades of experience.

The meat is cut into thin strips, then cold-smoked for almost a full day, giving it a truly intense and natural smoky flavor.

Finally, it's left to cure. During this process the meat loses most of its liquid, reaching a reduction of almost 70% compared to its original weight.

Thanks to this process, we can afford to skip adding any spices that would cover up the flavor of the meat, letting you fully savor its taste.

Every bite is an explosion of flavor in your mouth, thanks to the meat's marbling, since the small streaks of fat absorb and concentrate all the flavors.
