A cured sausage, thinly sliced and cooked

We take a lean salami and cure it slowly, as we have for seventy years.

Then we do something that is usually not done to cured meats: we slice it very thinly and bake it in the oven.

In the oven, each slice dries out until it becomes crispy, without oil and without a fryer. What comes out snaps under your teeth like a potato chip, but has the full flavor of aged salami.

That's why you find them among snacks and not at the deli counter. They were created for the aperitif bowl.

Origin

We select the meat and prepare lean salami. This is where the flavor comes from.

Aging

The salamis are cured slowly through a controlled process.

Cut

Only when they are ready do we slice them very thinly.

Crispiness

Each slice is oven-baked at a controlled temperature until it becomes crispy.
